IIFYM Friendly Recipe- Egg Muffins

  • 10 slices turkey bacon (Oscar Meyer)
  • 1/2 c chopped onion
  • 10 egg whites
  • 2 whole eggs
  • 8oz reduced fat cheddar cheese
  • 1/2 c bread crumbs
  • 1/4 c almond milk
  • 1/4 tsp onion powder
  • 1/4 tsp red pepper flakes


  1. Preheat oven to 350
  2. Spray two muffin tins with pan spray or line with paper linings
  3. Chop up bacon into small pieces.
  4. Spray frying pan with pam spray and heat
  5. Add chopped bacon to pan and cook till it’s mostly cooked
  6. Add onions and continue to cook bacon until fully cooked through
  7. Set aside to cool
  8. In a large bowl mix together egg whites, whole eggs, cheese, bread crumbs, almond milk, and spices
  9. Once bacon and onion mixture has cooled add to the bowl and stir in.
  10. Fill muffin tins up 3/4 of the way with mixture
  11. Bake at 350 for 18-20 minutes or until the centers are set
