Ingredients
- 10 slices turkey bacon (Oscar Meyer)
- 1/2 c chopped onion
- 10 egg whites
- 2 whole eggs
- 8oz reduced fat cheddar cheese
- 1/2 c bread crumbs
- 1/4 c almond milk
- 1/4 tsp onion powder
- 1/4 tsp red pepper flakes
Directions
- Preheat oven to 350
- Spray two muffin tins with pan spray or line with paper linings
- Chop up bacon into small pieces.
- Spray frying pan with pam spray and heat
- Add chopped bacon to pan and cook till it’s mostly cooked
- Add onions and continue to cook bacon until fully cooked through
- Set aside to cool
- In a large bowl mix together egg whites, whole eggs, cheese, bread crumbs, almond milk, and spices
- Once bacon and onion mixture has cooled add to the bowl and stir in.
- Fill muffin tins up 3/4 of the way with mixture
- Bake at 350 for 18-20 minutes or until the centers are set
