IIFYM Recipe- Cinnamon Raisin Sweet Potato Snack Bread

This Cinnamon Raisin Sweet Potato Snack Bread is a gluten free recipe that is sweet and satisfying. You can enjoy this recipe for breakfast or as a snack during your day. It is a high in protein recipe which would also make for the perfect post workout treat! I hope you enjoy!


  • 1/2 cup coconut flour
  • 1/4-1/2 cup coconut sugar or sweetener of your choice
  • 6 scoops of vital proteins collagen
  • 2 TBSP cinnamon
  • 1 TBSP baking powder
  • 1 and 1/3 cup liquid egg whites
  • 1 cup mashed sweet potato
  • 1 TBSP pure vanilla extract
  • 1/2 cup raisins


  1. Preheat oven to 350 degrees
  2. Mix together all of the dry ingredients (coconut flour, coconut sugar, collagen, cinnamon, baking powder)
  3. Add in your egg whites, mashed sweet potato and vanilla and mix well
  4. Let batter sit and line a 9 in. loaf pan with parchment paper. Spray with non stick spray
  5.  Fold your raisins into the batter
  6. Pour batter into the pan and bake for about 55 minutes or until toothpick comes out clean
