IIFYM Recipe- Shrimp and Sausage Skillet
Total Time: 20 minutes
Ingredients
- 1 lb shrimp (peeled and deveined)
- 6 oz of pre-cooked sausage (I use Hillshire Farm Turkey Smoked Sausage)
- 2 peppers, chopped
- 1 yellow onion, chopped
- 1 zucchini, chopped
- 1/4 cup chicken stock
- 2 cloves of garlic
- salt and pepper and red pepper flakes (if desired)
- Old Bay seasoning ( 2 tsp or more if desired)
- 1 tbsp olive oil (divided)
Directions
- Heat a large skillet over medium-high heat with 1/2 tbsp olive oil
- Season shrimp with Old Bay
- Cook Shrimp about 3-4 minutes until opaque- set aside
- Add remaining 1/2 tbsp olive oil to skillet
- Toss in onions and peppers for about 2 minutes
- Add sausage and zucchini to the skillet and cook for another 2 minutes
- Put cooked shrimp back into skillet and cook everything for another minute or so
- Pour chicken stock in and mix through
- Add salt, pepper, and red pepper flakes as desired
- Enjoy!
