Ingredients
- 1 TBSP olive oil
- 4 chicken breasts
- 1 tsp salt
- 1 TBSP chili powder
- 1 tsp garlic powder
- 1 tsp cumin
- 1/2 cup corn
- 2 small red onions, sliced
- 1 red pepper, diced
- 1 green pepper, diced
- 1 yellow pepper, diced
- 2 cups of cooked brown rice
- 3/4 cup fresh salsa
- 1/3 cup cilantro, chopped
- 1/4 cup feta cheese
Directions
- In a large frying pan, heat olive oil over medium high heat. Add chicken and stir fry for 2 minutes adding salt to season. Add in chili powder, cumin, and garlic powder and toss. Cook for another 3-4 minutes
- Add in red onion, corn, bell peppers and saute for 3-4 minutes. Add in cooked brown rice and salsa and toss to coat. Cook for an additional 5 minutes. Finish by mixing in cilantro and sprinkling with feta cheese.
