  • 1 TBSP olive oil
  • 4 chicken breasts
  • 1 tsp salt
  • 1 TBSP chili powder
  • 1 tsp garlic powder
  • 1 tsp cumin
  • 1/2 cup corn
  • 2 small red onions, sliced
  • 1 red pepper, diced
  • 1 green pepper, diced
  • 1 yellow pepper, diced
  • 2 cups of cooked brown rice
  • 3/4 cup fresh salsa
  • 1/3 cup cilantro, chopped
  • 1/4 cup feta cheese


  1. In a large frying pan, heat olive oil over medium high heat. Add chicken and stir fry for 2 minutes adding salt to season. Add in chili powder, cumin, and garlic powder and toss. Cook for another 3-4 minutes
  2. Add in red onion, corn, bell peppers and saute for 3-4 minutes. Add in cooked brown rice and salsa and toss to coat. Cook for an additional 5 minutes. Finish by mixing in cilantro and sprinkling with feta cheese.
