Who doesn’t love meatballs?! Today we bring you a new meal prep recipe that you MUST try. These honey Sriracha glazed meatballs are not only extremely easy to make, but the flavors are to die for. Just take 30 minutes out of your day and you have 8 meals for the week ready to go. I hope you enjoy it!
Ingredients
For the meatballs:
- 2 lb lean ground turkey
- 1 cup whole wheat panko breadcrumbs
- 2 eggs
- 1/4 cup green onion, chopped
- 1/2 tsp garlic powder
- 1/2 tsp salt
- 1/2 tsp black pepper
For the glaze:
- 1/4 cup Sriracha
- 3 TBSP reduced sodium soy sauce
- 3 TBSP rice vinegar
- 3 TBSP Honey
- 1 TBSP ginger
- 3 cloves garlic, minced
- 1/2 tsp toasted sesame oil
Directions
- Preheat oven to 375 degrees
- In a large bowl, mix together turkey, breadcrumbs, eggs, green onions, garlic powder and salt/pepper until combined. Begin to shape mixture into 1.5 inch balls (making roughly 40) and place on a baking sheet that has been lightly sprayed.
- Bake meatballs for 20-25 minutes or until cooked through
- While the meatballs are cooking, combine all of the ingredients for the glaze in a small saucepan
- Bring to a boil over medium heat, stirring continuously. Reduce heat and simmer 8-10 minutes
- Toss glaze with the meatballs and serve with brown rice, green onions, and some sesame seeds on top
