IIFYM Recipe- Slow Cooker Cowboy Supper
Total Time: 15 minutes prep, 6 hours cook
Ingredients
- 2 lbs lean ground beef or lean ground turkey
- 5 medium potatoes
- 1 onion, chopped
- 3 cloves of garlic, minced
- salt and pepper
- 1 can chili beans, undrained
- 1 can diced tomatoes, undrained
- 1 can corn, drained
- 1/4 cup water
- 8 oz of low fat cheddar cheese
Directions
- Brown the beef and drain
- While beef is cooking, add the cut up potatoes, salt and pepper to slow cooker
- Top with beef and spread into an even layer over potatoes
- Add onions and garlic. Top with tomatoes, chili beans, corn, and water
- Cover and cook on low for 6-8 hours until potatoes are tender
- Add shredded cheese and cover until melted
- Serve and enjoy!
