IIFYM Recipe- BBQ Pork Tenderloin w/ Grilled Cabbage Salad

Ingredients
BBQ PORK TENDERLOIN
- 1/2 cup prechopped onion
- 1 (8 ounce) package prechopped peppers
- 3/4 cup cider vinegar (divided)
- 3/4 cup water (divided)
- 2 tablespoons sugar
- 1 tablesppon plus 3/4 teaspoon kosher salt
- 1/2 cup kethcup
- 2 tablespoons brown sugar
- 1 tablespoon dry mustard
- 2 tablespoons Worcestershire sauce
- 1 teaspoon onion powder
- 1 teaspoon black pepper
- Cooking Spray
- 1 (1lb) pork tenderloin, trimmed
GRILLED CABBAGE SALAD
- 2 lb head red cabbage, cut into 8 wedges
- Cooking Spray
- 6 tablespoons canola mayonnaise
- 2 tablespoons chive
- 3 tablespoons cider vinegar
- 2 tablespoons water
- 2 teaspoons sugar
- 3/4 teaspoon black pepper
Directions
- Preheat grill to medium-high heat
- Combine onion and peppers in a bowl. Bring 1/2 cup vinegar, 1/2 cup water, sugar, and 1 tablespoon salt to a boil in a small sauce pan over medium high heat. Pour vinegar mixture over peppers, let stand for 15 min. Drain
- Bring remaining 1/4 cup vinegar, remaining 1/4 cup water, 1/4 teaspoon salt, ketchup, and next 6 ingredients to a boil in a saucepan over medium high heat. Cook 4 minutes or until slightly thickened. Place 1/2 cup sauce in a small bowl to reserve
- Coat grill rack with cooking spray. Sprinkle pork with remaining salt. Add pork to grill; grill 10 minutes, turning occasionally. Brush pork with remaining sauce; Grill 5 minutes or until meat reaches 140 degrees
- Add cabbage to grill for 12 minutes or until lightly charred.
- Combine mayonnaise and remaining ingredients in a bowl, stirring with a whisk. Drizzle over cabbage
